cd /path/to/mounted-dvd cat $(ls|grep VOB) | ffmpeg -i - -vn -b:a 192k OUTPUT

check track info: ffmpeg - i file ffprobe file ffprobe -show-streams file ffprobe -show_streams -select_streams a file
