Bukkit is a server engine for minecraft that is an addon for minecraft_server. Bukkit will allow you to layer a plethora of plugins ontop which allow you to make your experience unique, fun, and secure. Both Bukkits strength and limitation is that plugins are done server-side, while single player mods are done client side.

The good thing about this is that you do not need to worry about modding your client, or have your player's mod their clients. The default minecraft (or modded) will work for the most part. All of the modifications are done on the server, and nothing is generally needed for anyone to connect.
While this is a good thing, it also limits what can be done on a Bukkit Server. Due to this being server-side, bukkit is unable to add extra blocks or add UI elements that re not already included in Minecraft. While this may seem like it could hinder a minecraft server beyond playability, Bukkit has made a name for itself and you can find many unique and fun plugins to enhance your overall experience on a bukkit server.
Bukkit is generally not for everyone; as a server administrator for a bukkit server, you have to be very cautious of how you set up your server environment, or you'll run into issues later, down the road. There are many wonderful and unique plugins which will enhance your gameplay, and that will dictate what type of server it will become.

You can have limited-creative servers, hunger games, spleef servers, and much more.
