cucumber fries are made the exact same way as zucchini fries, even so far as using the same seasonings and breading, with 1 slight change, you slice the cucumbers super thin and remove as much water as possible before seasoning them. Watch cooking time and why having consistent size is so important, yes some of these were over-cooked but I like them almost burnt to the point they become brittle but you can cook yours however you see fit.

Steps:
- wash cucumbers
- trim off ends
- slice thin (1/16 - 1/8")
- remove as much moisture as possible using towels
- remove more moisture by adding salt to cucumbers
- dip into egg wash using whatever seasonings you prefer
- optional: add flour/corn meal breading
- lay out on greased cookie sheet or cake pan
- bake (different stoves use different temps and time - try 350 - 425 and try 15-30 minutes)
- they are done when they start to brown and are crispy
- remove from oven and let cool on cookie sheets about 5-10 minutes
