Audio board redesign - fixing my mistakes

For the walky-talky project (https://youtu.be/d_h38X4_eQQ), I made a custom PCB to hold the ESP32 dev board, the I2S Amplifier and the I2S Microphone. It worked really well, but there were a few shortcomings. In this video, we rectify those issues.

There were a number of shortcomings to my original design.
- I didn't expose any of the spare GPIO pins - so wiring anything else into the board was a bit of a pain
- I should have shared the I2S pins between the amplifier and microphone saving a few GPIO pins
- I didn't wire up the shutdown pin on the amplifier so there was no way to put it into low power mode
