For the Cookies: 2 cups (250g) plain/all-purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 large egg 3/4 cup (150g) caster/granulated sugar 1/4 cup (60ml) vegetable oil 2 tablespoons fresh lemon juice 1 teaspoon lemon extract 1/2 teaspoon vanilla extract Zest of 1 lemon Yellow food colouring, optional

For the Coating: 1/2 cup (100g) granulated sugar 1 cup (125g) icing/powdered sugar
